Ingredients
  

  • 1 cup pancake mix plus water or milk as directed on box
  • 2 tbsp pure maple syrup mixed into batter
  • 1/2 lb breakfast sausage cooked and crumbled
  • 3 large eggs scrambled and lightly cooked
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • non-stick cooking spray generous amount

Instructions
 

  • Preheat oven to 375°F and generously spray a mini muffin tin with cooking spray.
  • Mix pancake batter according to package directions, then stir in the maple syrup until combined.
  • Spoon about 1 tablespoon of batter into each muffin cup to cover the bottom.
  • Add a small amount of crumbled sausage, scrambled egg, and shredded cheese on top of the batter layer.
  • Top with another tablespoon of batter to seal the filling, just enough to cover.
  • Bake for 12 to 14 minutes until tops are set and lightly golden.
  • Cool in the pan for 3 to 4 minutes before removing. Serve warm.

Notes

  • Stir maple syrup into the batter, not just drizzled on top, for authentic McGriddle flavor.
  • Cook eggs just barely set before adding - they finish cooking in the oven.
  • Do not overfill the muffin cups to prevent spillover.
  • Freeze cooled bites flat then transfer to a freezer bag for up to 2 months.
  • Reheat from frozen in microwave 60-90 seconds or oven at 350°F for 8 minutes.
