Ingredients
  

Salmon Bites

  • 1 lb salmon fillets skinless, cut into 1-inch pieces
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
  • 0.5 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground

Honey Garlic Sauce

  • 2 tbsp honey
  • 1 tbsp soy sauce low sodium if preferred
  • 2 cloves garlic minced
  • 0.5 tsp fresh ginger grated, optional
  • 2 tbsp water

For Serving

  • 1 tsp sesame seeds for garnish
  • 2 tbsp green onions thinly sliced

Instructions
 

  • Pat the salmon fillets dry with paper towels, then cut them into roughly 1-inch bite-sized pieces and place them in a mixing bowl.
  • Add the cornstarch, olive oil, salt, and black pepper to the bowl and toss gently until each piece of salmon is lightly and evenly coated.
  • Preheat the air fryer to 400°F (200°C). Arrange the coated salmon pieces in a single layer in the basket, leaving space between them for air circulation.
  • Air fry the salmon bites for 8–10 minutes, shaking the basket or turning the pieces halfway through, until the edges are browned and the salmon is just cooked through.
  • While the salmon cooks, warm a small saucepan over medium heat with a little olive oil if needed. Add the minced garlic and ginger and cook for about 30 seconds, just until fragrant.
  • Stir in the soy sauce, honey, and water. Simmer the sauce for 2–3 minutes, stirring, until it slightly thickens and looks glossy.
  • Transfer the hot salmon bites to a clean bowl and pour the warm honey garlic sauce over the top. Toss gently so every piece is coated without breaking the salmon.
  • Sprinkle the salmon bites with sesame seeds and sliced green onions, then serve immediately over rice, grains, or vegetables.

Notes

For extra crisp edges, let the coated salmon sit for a few minutes before air frying so the cornstarch adheres well. Work in batches if your air fryer is small so the pieces can cook in a single layer.
