- 2 to 2½ cups yellow onions finely chopped
- ¾ cup all-purpose flour
- 1 tablespoon cornmeal
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1 to 2 teaspoons salt to taste
- ½ to 1 teaspoon black pepper freshly ground
- ¾ cup whole milk
- 2 cups vegetable oil for frying
Peel and finely chop 2 to 2½ cups yellow onions into ¼-inch pieces. Place in a large mixing bowl.
Whisk together ¾ cup flour, 1 tablespoon cornmeal, 1 tablespoon sugar, 2 teaspoons baking powder, salt, and pepper in a separate bowl.
Pour dry ingredients over onions and stir to coat evenly.
Add ¾ cup milk and stir until just combined. Batter should be thick and slightly lumpy.
Heat ½ inch oil in cast iron skillet over medium-high heat to 350-375°F.
Drop rounded tablespoons of batter into hot oil, working in batches of 4-5 fritters.
Flatten slightly with spoon and fry 2-3 minutes per side until deep golden brown.
Transfer to wire rack over paper towels to drain. Sprinkle with salt while hot.
