Preheat oven to 400 degrees F and generously grease a baking sheet with nonstick cooking spray.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
In a large bowl, whisk the melted butter and sugar until combined. Add the egg, vanilla extract, and applesauce, whisking until smooth.
Add the dry ingredients to the wet ingredients and stir gently just until combined. Do not overmix. Fold in the diced apples until evenly distributed.
Scoop out 1 tablespoon portions of batter and drop them a few inches apart onto the prepared baking sheet. You should get about 30 bites.
Bake for 10 minutes, then remove from oven. Turn the broiler to high heat.
While fritters cool slightly, make the glaze by whisking together the powdered sugar and apple cider until thin and pourable. Add more cider if needed.
Brush a generous amount of glaze over each warm fritter bite, letting it drip down the sides.
Broil for 2 to 4 minutes, rotating the pan frequently, until the glaze starts to bubble and caramelize. Watch closely to prevent burning.
Remove from oven and brush the remaining glaze evenly over the tops of all fritters.
Let sit for 15 minutes to allow the glaze to set and harden before serving.
