Ingredients
  

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples about 2 medium apples
  • 2 cups powdered sugar for glaze
  • 1/3 cup plus 2 tablespoons apple cider or juice for glaze

Instructions
 

  • Preheat oven to 400 degrees F and generously grease a baking sheet with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  • In a large bowl, whisk the melted butter and sugar until combined. Add the egg, vanilla extract, and applesauce, whisking until smooth.
  • Add the dry ingredients to the wet ingredients and stir gently just until combined. Do not overmix. Fold in the diced apples until evenly distributed.
  • Scoop out 1 tablespoon portions of batter and drop them a few inches apart onto the prepared baking sheet. You should get about 30 bites.
  • Bake for 10 minutes, then remove from oven. Turn the broiler to high heat.
  • While fritters cool slightly, make the glaze by whisking together the powdered sugar and apple cider until thin and pourable. Add more cider if needed.
  • Brush a generous amount of glaze over each warm fritter bite, letting it drip down the sides.
  • Broil for 2 to 4 minutes, rotating the pan frequently, until the glaze starts to bubble and caramelize. Watch closely to prevent burning.
  • Remove from oven and brush the remaining glaze evenly over the tops of all fritters.
  • Let sit for 15 minutes to allow the glaze to set and harden before serving.

Notes

  • Dice apples very finely for best distribution throughout bites
  • Don't overmix batter or fritters will be tough
  • Glaze should be thin enough to brush on easily
  • Watch broiler carefully as glaze can burn quickly
  • Store in airtight container at room temperature for 2 days or refrigerate for up to 5 days
  • Can freeze unglazed fritters for up to 3 months
