Ingredients
  

Cupcake Batter

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 0.5 cup milk room temperature

Apple Filling

  • 2 apples peeled and finely diced
  • 2 tbsp brown sugar
  • 0.5 tsp ground cinnamon
  • 1 tbsp butter for sautéing

Topping

  • 1 cup whipped cream or frosting for topping

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla, mix until combined.
  • Alternate adding the dry ingredients and milk into the wet mixture until fully combined.
  • Spoon batter into liners, filling 2/3 full. Bake 20–25 minutes or until a toothpick comes out clean.
  • While baking, prepare the filling: sauté apples with butter, brown sugar, and cinnamon until soft.
  • Cool cupcakes completely. Use a small spoon to scoop out centers and fill with apple mixture.
  • Top with whipped cream or frosting and garnish with a sprinkle of cinnamon if desired.

Notes

These cupcakes can be made a day ahead and stored in the fridge. Bring to room temperature before serving. Add a caramel drizzle for extra indulgence.
