- 3/4 cup all-purpose flour
- 1 tablespoon cornmeal
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt or to taste

- 3/4 cup whole milk or half-and-half
- 1 large egg lightly beaten, optional
- 2-3 cups vegetable or canola oil for frying

Peel and finely chop 2 cups of sweet onions into 1/4-inch pieces. Pat dry with paper towels to remove excess moisture.
In a large mixing bowl, whisk together 3/4 cup flour, 1 tablespoon cornmeal, 1 tablespoon sugar, 2 teaspoons baking powder, 1 teaspoon salt, and 1/2 teaspoon pepper until well combined with no lumps.
If using egg, beat 1 large egg with 3/4 cup milk in a small bowl. Pour wet ingredients into dry mixture and stir until just combined. A few small lumps are fine.
Fold in chopped onions until evenly coated throughout the batter. Let rest for 5 minutes while heating oil.
Heat 1/2 inch of oil in a large skillet over medium-high heat to 350-375°F. Use a thermometer to monitor temperature.
Drop rounded tablespoons of batter into hot oil, flattening slightly with back of spoon. Fry 4-5 fritters at a time to avoid overcrowding.
Fry for 2-3 minutes per side until deep golden brown and crispy. Adjust heat between batches to maintain oil temperature.
Transfer cooked fritters to a wire rack set over paper towels to drain. Serve immediately while hot and crispy.
