- 3 pounds Yukon Gold potatoes peeled and cut into 2-inch wedges
- 1/2 cup extra virgin olive oil
- 1 cup chicken broth or vegetable broth
- 1/2 cup fresh lemon juice from 3-4 lemons
- 4 garlic cloves minced
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon Dijon mustard optional
Preheat oven to 400°F (200°C). Peel and cut potatoes into wedges, soak in cold water 30 minutes, drain and dry.
Toss potatoes with olive oil, lemon juice, garlic, oregano, salt, pepper, and mustard. Spread in baking dish.
Pour broth around edges. Bake 45 minutes, flip, add more broth if needed. Increase to 425°F for 20-30 minutes until crispy.
Garnish with fresh oregano and lemon wedges. Serve hot.
For crispier edges, broil 2 minutes at end. Great for
