Ingredients
  

  • 3 pounds Yukon Gold potatoes peeled and cut into 2-inch wedges
  • 1/2 cup extra virgin olive oil
  • 1 cup chicken broth or vegetable broth
  • 1/2 cup fresh lemon juice from 3-4 lemons
  • 4 garlic cloves minced
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard optional

Instructions
 

  • Preheat oven to 400°F (200°C). Peel and cut potatoes into wedges, soak in cold water 30 minutes, drain and dry.
  • Toss potatoes with olive oil, lemon juice, garlic, oregano, salt, pepper, and mustard. Spread in baking dish.
  • Pour broth around edges. Bake 45 minutes, flip, add more broth if needed. Increase to 425°F for 20-30 minutes until crispy.
  • Garnish with fresh oregano and lemon wedges. Serve hot.

Notes

For crispier edges, broil 2 minutes at end. Great for
