  • 1 ripe mango peeled and diced
  • 0.25 cup red onion finely chopped
  • 0.5 cup cherry tomatoes halved
  • 2 tablespoons cilantro chopped

Dressing

  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground

Instructions
 

  • In a large mixing bowl, combine diced avocado, mango, red onion, cherry tomatoes, and chopped cilantro.
  • In a separate small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  • Pour the dressing over the salad and gently toss to coat all ingredients evenly.
  • Cover and refrigerate the salad for about 5 minutes to allow flavors to meld.
  • Serve chilled and enjoy immediately for best taste and texture.

Notes

For added crunch, you can sprinkle toasted pumpkin seeds or chopped cashews just before serving. This salad is also great as a topping for grilled chicken or fish.
