Ingredients
  

Salad Ingredients

  • 8 oz pasta rotini or penne, cooked and cooled
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber chopped
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh parsley chopped

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Instructions
 

  • Cook the pasta according to package instructions. Drain and rinse under cold water. Set aside to cool.
  • In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and black pepper to make the dressing.
  • In a large mixing bowl, combine the cooled pasta, diced avocados, cherry tomatoes, cucumber, red onion, and parsley.
  • Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Chill the salad in the refrigerator for at least 10 minutes before serving.

Notes

For extra protein, add grilled chicken or chickpeas. To keep avocado from browning, toss in lime juice before adding to the salad.
