- 2 cups full-fat cottage cheese
- 2 large eggs
- 1/2 cup rolled oats or almond flour
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 cup fresh or frozen blueberries
Preheat oven to 350°F and grease 2-4 ramekins. Blend cottage cheese, eggs, oats, maple syrup, vanilla, baking powder, and salt until smooth.
