Ingredients
  

  • 2 cups full-fat cottage cheese
  • 2 large eggs
  • 1/2 cup rolled oats or almond flour
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup fresh or frozen blueberries

Instructions
 

  • Preheat oven to 350°F and grease 2-4 ramekins. Blend cottage cheese, eggs, oats, maple syrup, vanilla, baking powder, and salt until smooth.
  • Fold in 3/4 cup blueberries by hand.
  • Divide batter into ramekins, top with remaining blueberries.
  • Bake 25-30 minutes until golden and set. Cool slightly.
