- 1.5 pounds new potatoes or baby Yukon gold halved or quartered
- 7 ounces feta cheese block crumbled
- 3 tablespoons olive oil
- 1 lemon zested and juiced
- 3 garlic cloves minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- Fresh dill or parsley for garnish
Preheat oven to 400°F. Toss potatoes with olive oil, lemon zest, juice, garlic, oregano, thyme, salt, and pepper.
Spread in baking dish. Top with crumbled feta.
Bake 35-40 minutes, stirring halfway, until tender and golden.
