Ingredients
  

  • 1.5 pounds new potatoes or baby Yukon gold halved or quartered
  • 7 ounces feta cheese block crumbled
  • 3 tablespoons olive oil
  • 1 lemon zested and juiced
  • 3 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • Fresh dill or parsley for garnish

Instructions
 

  • Preheat oven to 400°F. Toss potatoes with olive oil, lemon zest, juice, garlic, oregano, thyme, salt, and pepper.
  • Spread in baking dish. Top with crumbled feta.
  • Bake 35-40 minutes, stirring halfway, until tender and golden.
  • Garnish with fresh herbs and extra lemon. Serve warm.

Notes

  • Pat potatoes dry for crispier results.
  • Broil last 2 minutes for extra crunch.
  • Serves 4 as a side.
