For the Banana Brownies
- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas about 2 large bananas
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/2 tsp baking powder
For the Brown Butter Frosting
- 1/2 cup unsalted butter
- 2 cups powdered sugar sifted
- 1 1/2 tsp vanilla extract
- 2–3 tbsp milk as needed for consistency
Preheat your oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper.
In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs, mashed bananas, and vanilla extract, mixing until well combined.
In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
For the frosting, melt butter in a saucepan over medium heat. Continue cooking until it turns golden brown and gives off a nutty aroma, about 3–5 minutes. Remove from heat immediately.
Whisk in powdered sugar, vanilla, and milk until smooth and creamy. Spread the frosting over cooled brownies and let set for 20 minutes before slicing.
For an extra indulgent touch, sprinkle chopped walnuts or chocolate chips over the frosting before it sets. These brownies store beautifully in the fridge for up to 4 days.
