Ingredients
  

Dry Ingredients

  • 2 cups Rolled oats Old-fashioned preferred
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt

Wet Ingredients

  • 3 Ripe bananas Mashed
  • 1/2 cup Peanut butter Creamy or natural
  • 1/4 cup Maple syrup Pure
  • 1 tsp Vanilla extract

Optional Add-Ins

  • 1/2 cup Chocolate chips Optional
  • 1/4 cup Chopped walnuts or almonds Optional
  • 2 tbsp Ground flaxseed or chia seeds Optional
  • 1/4 cup Dried fruit Optional, such as raisins or cranberries

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving extra on the sides for easy removal.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add peanut butter, maple syrup, and vanilla extract to the bananas. Stir until well combined.
  • In another bowl, mix rolled oats, cinnamon, and salt.
  • Combine dry ingredients with the wet mixture. Stir until fully incorporated.
  • Fold in any optional add-ins like chocolate chips or nuts.
  • Spread the batter evenly into the prepared baking pan. Press down firmly with a spatula.
  • Bake for 25–30 minutes, or until the top is set and lightly golden.
  • Let the bars cool completely in the pan before lifting out and slicing into 12 bars.
