Chicken and Buffalo Sauce
- 2 boneless skinless chicken breasts cut into bite-sized pieces
- 1 tablespoon olive oil
- ⅓ cup buffalo sauce your favorite brand
Salad Base
- 4 cups romaine lettuce chopped
- ½ cup celery sliced
- ½ cup carrots shredded
- ¼ cup red onion thinly sliced
- ¼ cup cherry tomatoes halved
- ¼ cup blue cheese or ranch dressing
Heat olive oil in a skillet over medium heat. Add chicken pieces and cook for 6–8 minutes until golden and cooked through.
Pour buffalo sauce over the cooked chicken, toss to coat evenly, and simmer for 1–2 minutes. Remove from heat and let rest.
In a large bowl, combine romaine, celery, carrots, red onion, and cherry tomatoes. Toss gently to mix.
Top the salad with the warm buffalo chicken.
Drizzle with blue cheese or ranch dressing and serve immediately.
For a lighter version, use grilled chicken and serve with a yogurt-based ranch dressing. Want extra crunch? Add crumbled tortilla chips or roasted chickpeas on top!
