Ingredients
  

Chicken and Buffalo Sauce

  • 2 boneless skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • cup buffalo sauce your favorite brand

Salad Base

  • 4 cups romaine lettuce chopped
  • ½ cup celery sliced
  • ½ cup carrots shredded
  • ¼ cup red onion thinly sliced
  • ¼ cup cherry tomatoes halved
  • ¼ cup blue cheese or ranch dressing

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chicken pieces and cook for 6–8 minutes until golden and cooked through.
  • Pour buffalo sauce over the cooked chicken, toss to coat evenly, and simmer for 1–2 minutes. Remove from heat and let rest.
  • In a large bowl, combine romaine, celery, carrots, red onion, and cherry tomatoes. Toss gently to mix.
  • Top the salad with the warm buffalo chicken.
  • Drizzle with blue cheese or ranch dressing and serve immediately.

Notes

For a lighter version, use grilled chicken and serve with a yogurt-based ranch dressing. Want extra crunch? Add crumbled tortilla chips or roasted chickpeas on top!
