Ingredients
  

  • 2 cups carrots finely grated
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup milk
  • 1/2 cup unsalted butter melted
  • 2 teaspoons vanilla extract
  • 1/2 cup pecans chopped, optional
  • 1 cup brown sugar for the topping
  • 1 1/2 cups hot water
  • as needed caramel sauce for serving

Instructions
 

  • Preheat the oven to 350 F and grease a baking dish.
  • Whisk together the flour, baking powder, cinnamon, nutmeg, salt, granulated sugar, and brown sugar in a large bowl.
  • Stir in the milk, melted butter, vanilla, grated carrots, and pecans if using.
  • Spread the batter evenly in the prepared baking dish.
  • Sprinkle the brown sugar topping over the batter.
  • Carefully pour the hot water over the top without stirring.
  • Bake until golden and set, then rest a few minutes before serving.
  • Serve warm with caramel sauce.
