Ingredients
  

  • 1 lb ground beef (80/20)
  • 8 small flour tortillas (6-inch)
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • salt and black pepper to taste
  • 2 tbsp olive oil for pan-frying, or use cooking spray for baking

Instructions
 

  • Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Drain excess fat.
  • Season the beef with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 1 to 2 more minutes, then remove from heat and let cool slightly.
  • Warm the tortillas wrapped in a damp paper towel in the microwave for 20 seconds to make them pliable.
  • Fill each tortilla with about 1.5 tablespoons of beef and a pinch of cheese. Roll tightly and place seam-side down.
  • Pan-fry in olive oil over medium heat for 8 to 10 minutes, turning to brown all sides. Or bake at 425°F for 18 to 20 minutes after spraying with cooking spray.
  • Serve immediately with sour cream, salsa, and guacamole.

Notes

  • Do not overfill - 1.5 tbsp of filling per tortilla prevents splitting.
  • Air fryer method: 400°F for 8 to 10 minutes, flipping halfway.
  • Freeze unbaked flautas seam-side down, then cook from frozen at 425°F for 25 minutes.
  • Warm tortillas before rolling to prevent cracking.
