Ingredients
  

  • 2 pieces boneless skinless chicken breasts cooked and sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • to taste salt and black pepper
  • 1 tablespoon olive oil
  • 4 slices sourdough bread
  • 1 piece ripe avocado sliced
  • 4 slices Swiss or cheddar cheese
  • 2 tablespoons butter softened
  • 1 tablespoon mayonnaise or Dijon mustard optional
  • 2 tablespoons sliced red onion optional

Instructions
 

  • Season the chicken with garlic powder, smoked paprika, onion powder, salt, and pepper, then cook it in olive oil until heated through and lightly browned.
  • Spread butter on the outside of each bread slice and a thin layer of mayonnaise or mustard on the inside if using.
  • Layer the cheese, chicken, avocado, and red onion between the bread slices, then toast in a skillet until golden and melted.
  • Rest for 1 minute, slice, and serve the Chicken Avocado Melt Sandwich warm.

Notes

    >Use ripe but firm avocado for the best texture. >Cover the skillet briefly if the cheese needs help melting. >Add lemon juice to the avocado to help slow browning. >This sandwich is best served fresh.
