Ingredients
  

Candy Base

  • 14 oz wrapped soft caramels
  • 2 tbsp water or heavy cream
  • 1 cup chopped pecans toasted if desired
  • 1 cup crispy rice cereal

Chocolate Coating

  • 2 cups milk chocolate chips
  • 1 tbsp shortening or coconut oil

Instructions
 

  • In a heavy saucepan over low heat, melt the soft caramels with water or cream, stirring continuously until smooth.
  • Remove from heat and stir in chopped pecans and rice cereal until fully coated.
  • Drop small scoops of the caramel mixture onto parchment-lined baking sheets and chill for 10 minutes.
  • Melt chocolate chips and shortening together in the microwave in 30-second intervals, stirring until smooth.
  • Dip each chilled caramel cluster into the melted chocolate, coat thoroughly, and return to the tray.
  • Chill for 15–20 minutes until the chocolate is fully set.

Notes

For a gourmet touch, sprinkle flaky sea salt on top before the chocolate sets. Store in an airtight container for up to two weeks.
