Dry Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet Ingredients
- 1/2 cup unsalted butter softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1 large egg room temperature
- 1 tsp vanilla extract
Add-Ins
- 1 cup semi-sweet chocolate chips
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat the butter, peanut butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2 minutes.
Add the egg and vanilla extract, mixing until fully incorporated.
Gradually mix in the dry ingredients until a dough forms. Stir in the chocolate chips.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 9–10 minutes, or until the edges are lightly golden but the centers are still soft.
Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
For extra indulgence, drizzle melted chocolate over the cooled cookies or press a few chocolate chips on top before baking. Store in an airtight container for up to 5 days.
