Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup sugar
  • 0.5 cup brown sugar
  • 0.5 cup vegetable oil
  • 2 pcs eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup marshmallow fluff
  • 0.5 cup butter softened
  • 1 cup powdered sugar

Instructions
 

  • Preheat oven to 180°C and line baking trays.
  • Whisk flour, cocoa powder, baking soda, and salt.
  • Mix sugars, oil, eggs, and vanilla until smooth.
  • Combine wet and dry ingredients with buttermilk.
  • Scoop batter and bake for 10 to 12 minutes.
  • Cool completely before adding filling.
  • Beat butter, powdered sugar, and marshmallow fluff.
  • Sandwich cookies with filling and serve.

Notes

  • Do not overbake to keep cookies soft.
  • Chill filling if too soft.
  • Use a scoop for even sizes.
