- 1 pound sirloin or ribeye steak cut into 1-inch cubes
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 4 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon smoked paprika
Pat steak cubes completely dry with paper towels. Season with salt, pepper, garlic powder, paprika, and Worcestershire sauce, tossing until evenly coated.
Heat olive oil in a large skillet over medium-high heat until shimmering. Add steak bites in a single layer without crowding. Sear for 90 seconds without moving.
Flip steak bites and cook for 1 to 2 minutes until golden brown and cooked to your preferred doneness (130-135°F for medium-rare). Remove to a plate and tent with foil.
Lower heat to medium. Add butter to the skillet and let melt, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant.
Stir in Dijon mustard, lemon juice, parsley, chives, red pepper flakes, and smoked paprika. Whisk until well combined and bubbly.
Return steak bites to the skillet and toss in the cowboy butter for 1 to 2 minutes until evenly coated. Serve immediately with extra cowboy butter on the side.
