- 1 pound smoked sausage sliced into coins
- 3 medium potatoes diced small
- 1 medium yellow onion sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic minced
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon Worcestershire sauce
- Salt and black pepper to taste
Heat olive oil and butter in a large skillet over medium heat.
Add the diced potatoes, season lightly, and cook until golden and tender, stirring now and then.
Push the potatoes to one side of the pan and add the smoked sausage. Let it brown for a few minutes.
Add the onion, peppers, garlic, paprika, garlic powder, onion powder, salt, and black pepper.
Stir everything together and cook until the vegetables soften and the sausage is nicely browned.
Finish with Worcestershire sauce and a final toss before serving hot.
>Use smoked sausage for the deepest savory flavor.
>Dice the potatoes small so they cook in time with the vegetables.
>Let the sausage sit undisturbed for a minute or two so it browns well.
>Add a pinch of red pepper flakes if you want a little heat.
>Finish with parsley or green onions for freshness.
