Ingredients
  

  • 1 pound smoked sausage sliced into coins
  • 3 medium potatoes diced small
  • 1 medium yellow onion sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil and butter in a large skillet over medium heat.
  • Add the diced potatoes, season lightly, and cook until golden and tender, stirring now and then.
  • Push the potatoes to one side of the pan and add the smoked sausage. Let it brown for a few minutes.
  • Add the onion, peppers, garlic, paprika, garlic powder, onion powder, salt, and black pepper.
  • Stir everything together and cook until the vegetables soften and the sausage is nicely browned.
  • Finish with Worcestershire sauce and a final toss before serving hot.

Notes

    >Use smoked sausage for the deepest savory flavor. >Dice the potatoes small so they cook in time with the vegetables. >Let the sausage sit undisturbed for a minute or two so it browns well. >Add a pinch of red pepper flakes if you want a little heat. >Finish with parsley or green onions for freshness.
