  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese freshly grated
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley chopped, for garnish

Instructions
 

  • Slice chicken breasts in half horizontally or pound to even thickness. Season with salt, pepper, and half the Italian seasoning.
  • Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through, 4-5 minutes per side. Remove to a plate.
  • Reduce heat, add butter and garlic, stirring just until fragrant.
  • Pour in heavy cream, scraping up brown bits. Stir in parmesan and remaining Italian seasoning, simmer until slightly thickened, 3-5 minutes.
  • Return chicken to pan and coat with the sauce. Let simmer another 2–3 minutes. Garnish with parsley before serving.

Notes

For best results, always use freshly grated parmesan and take care not to overcook the chicken. If reheating, loosen the sauce with a splash of cream. Serve with mashed potatoes or green beans for a cozy meal.
