In a large bowl, toss chopped romaine lettuce with half the Caesar dressing and half the parmesan cheese. Set aside.
Combine ground chicken, garlic powder, smoked paprika, oregano, salt, and pepper in a medium bowl. Mix gently until just combined.
Divide chicken mixture into 8 equal portions. Press one portion onto each flour tortilla in a thin, even layer reaching the edges.
Heat olive oil in a large skillet over medium-high heat. Working in batches, place tortillas chicken-side down. Press firmly with spatula for 15-30 seconds.
Cook undisturbed for 3-4 minutes until chicken is deeply golden and cooked through. Flip and cook tortilla side for 1-2 minutes until lightly crisped.
Remove from pan and fold tacos in half. Top with Caesar salad mixture, extra dressing, remaining parmesan, and crushed croutons if using. Serve immediately.
