Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 15 oz can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 0.25 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons cornstarch slurry (optional) for thickening

Instructions
 

  • Sauté onions and garlic in olive oil until fragrant.

  • Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
