Salad Ingredients
- 2 cups cucumber Sliced (regular or English cucumber)
- 2 large ripe tomatoes Diced or sliced
- 1 large avocado Diced
- 0.25 cup red onion Thinly sliced
- 2 tablespoons fresh cilantro Chopped
- 2 tablespoons parsley or other fresh herbs Chopped
Dressing Ingredients
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice Or lime juice
- 0.25 teaspoon black pepper
- To taste salt
Optional Additions
- 0.25 cup feta cheese Crumbled
- 1 tablespoon balsamic vinegar Optional for extra tang
Slice the cucumber into rounds or half-moons. Dice the tomatoes and avocado. Thinly slice the red onion. Chop the cilantro and parsley.
In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and black pepper to make the dressing.
In a large mixing bowl, combine the cucumber, tomatoes, avocado, red onion, and herbs.
