Ingredients
  

Salad Ingredients

  • 2 cups cucumber Sliced (regular or English cucumber)
  • 2 large ripe tomatoes Diced or sliced
  • 1 large avocado Diced
  • 0.25 cup red onion Thinly sliced
  • 2 tablespoons fresh cilantro Chopped
  • 2 tablespoons parsley or other fresh herbs Chopped

Dressing Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice Or lime juice
  • 0.25 teaspoon black pepper
  • To taste salt

Optional Additions

  • 0.25 cup feta cheese Crumbled
  • 1 tablespoon balsamic vinegar Optional for extra tang

Instructions
 

  • Slice the cucumber into rounds or half-moons. Dice the tomatoes and avocado. Thinly slice the red onion. Chop the cilantro and parsley.
  • In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and black pepper to make the dressing.
  • In a large mixing bowl, combine the cucumber, tomatoes, avocado, red onion, and herbs.
  • Pour the dressing over the salad ingredients. Gently toss to coat, being careful not to mash the avocado.
  • Top with feta cheese or a drizzle of balsamic vinegar if desired. Serve immediately for the freshest flavor.
