Ingredients
  

  • 32 ounces frozen diced hash brown potatoes thawed
  • 1 small yellow onion finely diced
  • 2 cups sour cream
  • 1 can condensed cream of chicken soup
  • 2 cups shredded sharp cheddar cheese divided
  • 1 packet French onion soup mix
  • 1/2 cup butter melted
  • 2 cups crushed butter crackers or crispy fried onions for topping

Instructions
 

  • Preheat the oven and grease a baking dish. In a large bowl, combine the potatoes, onion, sour cream, cream of chicken soup, half the cheddar cheese, and the French onion soup mix.
  • Spread the mixture into the prepared dish, then top with the remaining cheddar, melted butter, and the cracker or fried onion topping.
  • Bake until hot, bubbling, and golden brown. Let the casserole rest briefly before serving so the texture sets nicely.
