Step 2: Mix the Wet Ingredients

  • In a separate bowl, beat the eggs, then add the buttermilk, melted butter (or oil), and vanilla extract. Stir until well combined.

Step 3: Combine Wet and Dry Mixtures

  • Pour the wet mixture into the dry ingredients. Use a spatula or whisk to gently fold them together until just combined. Do not overmix—a few small lumps are fine and will make the pancakes fluffier.

Step 4: Preheat and Grease the Griddle
