Ingredients
  

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 1 tsp salt or to taste
  • 0.5 tsp red pepper flakes optional
  • 2 tbsp fresh parsley, chopped for garnish

Instructions
 

  • Dry and season the steak cubes with paper towels, then coat with salt, pepper, paprika, and onion powder. Set aside.
  • Cook the potatoes in 1 tbsp olive oil over medium-high heat, cut-side down, for 8 to 10 minutes until golden and tender. Season and remove from pan.
  • Increase heat to high and add remaining oil. Sear steak bites in a single layer for 1 to 2 minutes per side until browned. Work in batches if needed.
  • Reduce heat to medium, add butter and garlic to the pan. Stir for 30 seconds until fragrant.
  • Return potatoes to the skillet and toss everything in the garlic butter for 1 to 2 minutes.
  • Garnish with fresh parsley and red pepper flakes. Serve immediately.

Notes

  • Always pat the steak dry before searing for the best crust.
  • Do not crowd the pan - sear in batches if needed.
  • Garlic burns fast; add it only after reducing the heat.
  • Leftovers reheat best in a skillet with a little butter.
