- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved
- 4 cloves garlic, minced
- 3 tbsp unsalted butter
- 2 tbsp olive oil, divided
- 1 tsp smoked paprika
- 1 tsp onion powder
- 0.5 tsp black pepper
- 1 tsp salt or to taste
- 0.5 tsp red pepper flakes optional
- 2 tbsp fresh parsley, chopped for garnish
Dry and season the steak cubes with paper towels, then coat with salt, pepper, paprika, and onion powder. Set aside.
Cook the potatoes in 1 tbsp olive oil over medium-high heat, cut-side down, for 8 to 10 minutes until golden and tender. Season and remove from pan.
Increase heat to high and add remaining oil. Sear steak bites in a single layer for 1 to 2 minutes per side until browned. Work in batches if needed.
Reduce heat to medium, add butter and garlic to the pan. Stir for 30 seconds until fragrant.
Return potatoes to the skillet and toss everything in the garlic butter for 1 to 2 minutes.
Garnish with fresh parsley and red pepper flakes. Serve immediately.
