Ingredients
  

  • 1 ½ cups jasmine rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 1 lemon zested and juiced
  • ½ tsp ground turmeric
  • ½ tsp black pepper
  • 2 tbsp parsley chopped

Instructions
 

  • Heat olive oil in a saucepan and sauté onion and garlic until fragrant.
  • Add jasmine rice, stirring to coat grains evenly.
  • Pour in broth, lemon juice, zest, turmeric, salt, and pepper. Stir and bring to a simmer.
  • Cover and cook for 15 minutes on low heat.
  • Remove from heat, let rest 10 minutes, then fluff with a fork and garnish with parsley.

Notes

  • Always rinse rice before cooking to remove excess starch.
  • Adjust lemon juice to your taste preference.
  • Reheat with a splash of broth to restore moisture.
