Banana Bread Ingredients
- 3 ripe bananas mashed (about 1½ cups)
- 0.5 cup Greek yogurt plain or vanilla
- 2 large eggs room temperature
- 0.5 cup brown sugar packed
- 0.25 cup white sugar
- 0.33 cup butter melted and slightly cooled
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 0.5 teaspoon ground cinnamon optional
- 0.5 cup chocolate chips or chopped walnuts optional mix-ins
Step 1: Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
Step 2: In a large bowl, mash the ripe bananas until smooth. Add Greek yogurt, eggs, brown sugar, white sugar, melted butter, and vanilla extract. Mix well until the batter is creamy and fully combined.
Step 3: In a separate bowl, whisk together flour, baking soda, salt, and optional cinnamon.
Step 4: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Do not overmix. Fold in chocolate chips or walnuts if using.
Step 5: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 6: Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Step 7: Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
