Chicken Salad
- 2 cups cooked chicken shredded or chopped
- 1/2 cup plain Greek yogurt full-fat or low-fat
- 2 tablespoons mayonnaise optional, for extra creaminess
- 1 teaspoon Dijon mustard
- 1/2 cup celery chopped
- 1/4 cup red onion finely chopped
- 1/4 cup grapes halved, optional for sweetness
- 2 tablespoons fresh parsley chopped
- 1 tablespoon lemon juice freshly squeezed
