- 1.5 cups granulated sugar
- 2 teaspoons baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 0.75 cup buttermilk room temperature
- 0.33 cup fresh lime juice
- 2 tablespoons lime zest
- 3 large eggs room temperature
- 0.5 cup unsalted butter melted
- 0.25 cup vegetable oil
- 1 teaspoon vanilla extract
- green food coloring optional
Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
In another bowl, combine buttermilk, lime juice, lime zest, eggs, melted butter, oil, and vanilla. Add food coloring if using.
Pour wet ingredients into dry and mix until just combined. Do not overmix.
Divide batter between pans. Bake for 25 to 30 minutes until toothpick comes out clean.
