Ingredients
  

  • 2 cups full-fat cottage cheese blended smooth
  • 3 large eggs
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup vanilla whey protein powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 4 tablespoons softened butter for filling
  • 1/3 cup brown sugar or low-carb sweetener
  • 2 tablespoons ground cinnamon
  • 1/2 cup powdered sugar for glaze
  • 2 tablespoons milk for glaze

Instructions
 

  • Preheat oven to 350°F. Grease 9x5 loaf pan.
  • Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
  • Whisk dry ingredients: almond flour, coconut flour, protein powder, baking powder, xanthan gum, salt.
  • Combine wet and dry into sticky dough. Rest 10 minutes.
  • Roll dough into 12x9 rectangle on parchment. Spread butter, sprinkle cinnamon-sugar. Roll into log, swirl into pan.
  • Bake 45-50 minutes until golden. Cool, glaze with powdered sugar + milk.
