- 2 cups full-fat cottage cheese blended smooth
- 3 large eggs
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup vanilla whey protein powder
- 2 teaspoons baking powder
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon salt
- 4 tablespoons softened butter for filling
- 1/3 cup brown sugar or low-carb sweetener
- 2 tablespoons ground cinnamon
- 1/2 cup powdered sugar for glaze
- 2 tablespoons milk for glaze
Preheat oven to 350°F. Grease 9x5 loaf pan.
Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
Whisk dry ingredients: almond flour, coconut flour, protein powder, baking powder, xanthan gum, salt.
Combine wet and dry into sticky dough. Rest 10 minutes.
