Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 5 medium potatoes (Yukon gold or russet), thinly sliced about 1/8 inch
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup beef broth
  • 1/4 cup milk optional for extra creaminess
  • Fresh parsley, chopped for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
  • Heat olive oil in a skillet over medium heat. Brown 1 lb ground beef, drain fat. Add onion and garlic, cook until soft. Season with salt, pepper, Italian seasoning, paprika.
  • Spread beef mixture in dish. Layer thinly sliced potatoes on top.
  • Pour beef broth around edges. Drizzle milk if using. Top with cheeses.
  • Cover with foil, bake 30 minutes. Uncover, bake 20 more minutes until golden and tender.
  • Rest 5 minutes, garnish with parsley, serve.

Notes

  • Slice potatoes thinly for even cooking.
  • Brown beef well for flavor.
  • Don't skip broth for moisture.
