- 1 lb ground beef (80/20)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 5 medium potatoes (Yukon gold or russet), thinly sliced about 1/8 inch
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup beef broth
- 1/4 cup milk optional for extra creaminess
- Fresh parsley, chopped for garnish
Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
Heat olive oil in a skillet over medium heat. Brown 1 lb ground beef, drain fat. Add onion and garlic, cook until soft. Season with salt, pepper, Italian seasoning, paprika.
Spread beef mixture in dish. Layer thinly sliced potatoes on top.
Pour beef broth around edges. Drizzle milk if using. Top with cheeses.
Cover with foil, bake 30 minutes. Uncover, bake 20 more minutes until golden and tender.
Rest 5 minutes, garnish with parsley, serve.
