- 1 lb boneless skinless chicken thighs or breasts cut into bite-sized pieces
- 1 cup long-grain white rice rinsed
- 2 cups chicken broth low-sodium
- 1/2 cup BBQ sauce smoky kind
- 1/4 cup honey
- 1 cup frozen mixed vegetables
- 2 tablespoons olive oil divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
Heat 1 tbsp olive oil in large skillet over medium-high. Season chicken with garlic powder, onion powder, smoked paprika, salt, pepper. Sear until golden, ~5 min. Remove.
Add remaining oil. Toast rice 1-2 min until nutty.
Stir in broth, BBQ sauce, honey. Scrape browned bits.
Nestle chicken back. Cover, simmer low 15 min.
Top with vegetables. Cover, cook 5 more min.
Off heat, rest 5 min covered. Fluff and serve.
