Ingredients
  

  • 1 lb boneless skinless chicken thighs or breasts cut into bite-sized pieces
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth low-sodium
  • 1/2 cup BBQ sauce smoky kind
  • 1/4 cup honey
  • 1 cup frozen mixed vegetables
  • 2 tablespoons olive oil divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions
 

  • Heat 1 tbsp olive oil in large skillet over medium-high. Season chicken with garlic powder, onion powder, smoked paprika, salt, pepper. Sear until golden, ~5 min. Remove.
  • Add remaining oil. Toast rice 1-2 min until nutty.
  • Stir in broth, BBQ sauce, honey. Scrape browned bits.
  • Nestle chicken back. Cover, simmer low 15 min.
  • Top with vegetables. Cover, cook 5 more min.
  • Off heat, rest 5 min covered. Fluff and serve.

Notes

    >Rinse rice to prevent gumminess. >Low simmer for perfect texture. >Garnish with green onions.
