This quick Honey Garlic Chicken Bowl features juicy, bite-size chicken pieces simmered in a sticky honey garlic sauce and served over warm rice for an easy weeknight dinner.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and rice vinegar until the mixture is smooth; set aside near the stove.
Pat the chicken pieces dry with paper towels, season lightly with salt and black pepper, then toss with cornstarch until every cube is evenly coated.
Heat the oil in a large skillet over medium-high heat. When the oil is hot and shimmering, add the chicken in a single layer.
Cook the chicken, stirring occasionally, until the pieces are golden on the outside and cooked through in the center.
Give the sauce a quick stir and pour it into the skillet. It will bubble immediately; reduce the heat to low and simmer for a few minutes, stirring, until the sauce thickens and coats the chicken.
Divide the warm rice between serving bowls, spoon the honey garlic chicken and extra sauce over the top, then finish with green onions and sesame seeds if using.
Notes
For a spicier version, stir a small amount of chili flakes or sriracha into the sauce. Leftovers reheat well in the microwave with a splash of water if the sauce has thickened too much.
