Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • to taste salt and pepper
  • 2 cups cooked jasmine rice
  • 1 large ripe avocado, mashed
  • 1 tbsp chopped cilantro
  • 1 tsp fresh lemon juice

Instructions
 

  • In a bowl, mix honey, lime juice, zest, garlic, olive oil, salt, and pepper.
  • Coat chicken breasts and marinate 15–30 minutes.
  • Grill chicken 4–5 minutes per side until cooked and golden.
  • Mash avocado into fresh rice with lemon juice, cilantro, salt.
  • Layer rice, then slice chicken on top, and drizzle with honey-lime glaze.

Notes

  • For extra flavor, marinate overnight.
  • Add chili flakes for a spicy version.
