- 1 1/2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 1/2 cups old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup packed brown sugar
- 1 1/2 to 1 3/4 cups buttermilk adjust for sticky dough
Preheat oven to 450°F (230°C). Line a Dutch oven with parchment paper.
In a large bowl, whisk together whole wheat flour, all-purpose flour, oats, baking soda, salt, and brown sugar.
Gradually add buttermilk, stirring until a sticky dough forms. Do not overmix.
Transfer dough to prepared Dutch oven. Smooth top with wet hands or spoon into a round.
Score a deep X on top with a sharp knife.
Cover with lid and bake for 45 minutes. Remove lid and bake 10 more minutes until golden.
Cool on a rack before slicing.
- Use cold buttermilk for best rise.
