Ingredients
  

  • 1 1/2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup packed brown sugar
  • 1 1/2 to 1 3/4 cups buttermilk adjust for sticky dough

Instructions
 

  • Preheat oven to 450°F (230°C). Line a Dutch oven with parchment paper.
  • In a large bowl, whisk together whole wheat flour, all-purpose flour, oats, baking soda, salt, and brown sugar.
  • Gradually add buttermilk, stirring until a sticky dough forms. Do not overmix.
  • Transfer dough to prepared Dutch oven. Smooth top with wet hands or spoon into a round.
  • Score a deep X on top with a sharp knife.
  • Cover with lid and bake for 45 minutes. Remove lid and bake 10 more minutes until golden.
  • Cool on a rack before slicing.

Notes

  • Use cold buttermilk for best rise.
  • Dough should be sticky, not dry.
  • Score deeply for even baking.
