Soup Ingredients
- 2 cups Cooked shredded chicken preferably rotisserie
- 1 cup Orzo pasta
- 6 cups Chicken broth low sodium preferred
- 1 medium Onion finely chopped
- 2 cloves Garlic minced
- 2 tablespoons Olive oil
- 1/4 cup Fresh lemon juice about 1 lemon
- 1/4 cup Fresh parsley chopped
- To taste Salt and pepper
Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a boil.
Add the orzo pasta, reduce heat to a simmer, and cook until tender, about 8-10 minutes.
Stir in the shredded chicken and cook for another 5 minutes to heat through.
Remove from heat, then stir in fresh lemon juice and chopped parsley.
Season with salt and pepper to taste. Let the soup rest for 10 minutes before serving.
For a creamier texture, add a splash of heavy cream or Greek yogurt before serving. Adjust lemon juice based on your preference for tanginess.
