- 1 cup unsalted butter softened
- 1 cup light brown sugar packed
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 cups rolled oats finely ground
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1 cup chopped walnuts or pecans optional
Preheat the oven and line a baking sheet with parchment paper. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy, then add the eggs and vanilla.
In a separate bowl, mix the flour, ground oats, baking soda, baking powder, and salt. Add the dry ingredients to the butter mixture and stir just until combined.
Fold in the chocolate chips and nuts if using. Scoop onto the tray, bake until the edges are set and the centers are slightly soft, then cool on the pan before transferring to a rack.
