- 4 boneless skinless chicken breasts (about 6 oz each)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup parmesan cheese, freshly grated
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- salt and black pepper to taste
- fresh basil leaves for serving
Pat dry and season the chicken breasts with salt, pepper, and oregano on both sides.
Sear the chicken in hot olive oil over medium-high heat, 4 to 5 minutes per side until golden. Remove and set aside.
Cook the garlic in the same pan over medium heat for 30 seconds, then add sun-dried tomatoes and stir for 1 minute.
Deglaze with chicken broth, scraping up all the browned bits from the pan.
Add heavy cream and bring to a gentle simmer. Stir in parmesan and red pepper flakes until smooth.
Return the chicken to the pan and simmer on medium-low for 8 to 10 minutes until cooked through and the sauce has thickened.
Garnish with fresh basil and serve immediately over pasta, mashed potatoes, or crusty bread.
