Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup parmesan cheese, freshly grated
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • salt and black pepper to taste
  • fresh basil leaves for serving

Instructions
 

  • Pat dry and season the chicken breasts with salt, pepper, and oregano on both sides.
  • Sear the chicken in hot olive oil over medium-high heat, 4 to 5 minutes per side until golden. Remove and set aside.
  • Cook the garlic in the same pan over medium heat for 30 seconds, then add sun-dried tomatoes and stir for 1 minute.
  • Deglaze with chicken broth, scraping up all the browned bits from the pan.
  • Add heavy cream and bring to a gentle simmer. Stir in parmesan and red pepper flakes until smooth.
  • Return the chicken to the pan and simmer on medium-low for 8 to 10 minutes until cooked through and the sauce has thickened.
  • Garnish with fresh basil and serve immediately over pasta, mashed potatoes, or crusty bread.

Notes

  • Use a cast iron or stainless skillet for the best sear - avoid nonstick for this recipe.
  • Keep cream sauce at a gentle simmer to prevent it from breaking.
  • Chicken thighs can be substituted for breasts with great results.
  • For a keto plate, serve over cauliflower rice.
