- 2 boneless skinless chicken breasts (about 1 lb) cut into bite-sized pieces
- 1 medium zucchini sliced into half-moons
- 1 red bell pepper sliced into strips
- 1 yellow bell pepper sliced into strips
- 1 cup cherry tomatoes halved
- 2 cups fresh baby spinach
- 3 cloves garlic minced
- 2 tablespoons extra-virgin olive oil divided
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 lemon juice of 1 (about 2 tbsp)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup crumbled feta cheese optional, for serving
- Fresh parsley chopped, for garnish
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Toss the chicken pieces with smoked paprika, oregano, salt, and pepper. Add to the pan and cook for 5-6 minutes until golden and cooked through.
Remove chicken to a plate. In the same skillet, add remaining oil. Add zucchini, bell peppers, and garlic. Stir-fry for 4 minutes.
Stir in cherry tomatoes and spinach, cooking 2 minutes until wilted. Return chicken, add lemon juice, and toss for 1 minute. Serve with feta and parsley.
