Ingredients
  

  • 1 lb chicken tenders or breasts sliced into strips
  • 3 tablespoons extra virgin olive oil divided
  • 3 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 cup cherry tomatoes halved, optional
  • 0.25 cup crumbled feta cheese optional
  • fresh parsley chopped, for garnish
  • lemon wedges for serving

Instructions
 

  • Pat chicken dry. Whisk 2 tbsp olive oil, garlic, lemon juice, oregano, paprika, cumin, salt, and pepper. Marinate chicken 10-15 minutes.
  • Heat remaining olive oil in skillet over medium-high. Add chicken in single layer; cook 4-5 minutes per side until 165°F.
  • Add cherry tomatoes last 2 minutes if using. Remove from heat, top with feta and parsley. Serve with lemon wedges.

Notes

  • Marinate longer for bolder flavor.
  • Grill alternative: medium heat, 4-5 min/side.
  • Store fridge 3 days or freeze 2 months.
