Ingredients
  

  • 2 medium zucchinis sliced into rounds
  • 2 cups cherry tomatoes halved
  • 4 pieces chicken breasts boneless, skinless
  • 1 medium red onion sliced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano dried
  • 1 teaspoon smoked paprika
  • 2 cloves garlic minced
  • 0.33 cup feta cheese crumbled
  • basil leaves for garnish

Instructions
 

  • Preheat oven to 400°F (200°C) and brush a baking dish with olive oil.
  • Layer half of the zucchini and tomatoes, then season with salt and oregano.
  • Place seasoned chicken breasts on top and cover with remaining vegetables.
  • Drizzle lemon juice and olive oil before baking for 30–35 minutes until tender.
  • Broil briefly for golden tops, then scatter feta and basil before serving.
