Graham Crust
- 1 ½ cups graham cracker crumbs finely crushed
- ¼ cup granulated sugar
- ½ cup melted butter
Cheesecake Filling
- 16 oz cream cheese softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups whipping cream or cool whip whipped to soft peaks
Topping
- 1 can cherry pie filling
- extra graham cracker crumbs optional, for garnish
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate to form the crust. Chill while preparing the filling.
In a mixing bowl, beat softened cream cheese, sugar, and vanilla extract with a hand mixer until smooth and creamy.
In a separate bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
Spread the cheesecake mixture evenly over the crust. Cover and refrigerate for at least 4 hours, or overnight, to set.
