Ingredients
  

Chocolate Cookie Crust

  • 24 pieces chocolate sandwich cookies Crushed into fine crumbs
  • 5 tablespoons melted butter

Chocolate Cheesecake Filling

  • 16 oz full-fat cream cheese Softened to room temperature
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 0.33 cup cocoa powder
  • 1 cup melted dark chocolate Cooled slightly
  • 1.25 cups heavy whipping cream

Optional Toppings

  • 0.5 cup whipped cream For decorating
  • 0.25 cup crushed chocolate cookies For garnish
  • 0.25 cup chocolate chips Optional for topping

Instructions
 

  • Place the chocolate sandwich cookies in a food processor and pulse into fine crumbs. Mix with melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust. Refrigerate while making the filling.
  • In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add powdered sugar, vanilla extract, and cocoa powder. Mix until creamy with no lumps.
  • Slowly add the melted dark chocolate to the cream cheese mixture. Stir until fully combined and smooth.
  • In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the chocolate cheesecake filling.
  • Pour the cheesecake filling over the prepared crust. Smooth the top with a spatula. Refrigerate for at least 4 hours or overnight to allow the cheesecake to set.
  • Before serving, top the cheesecake with whipped cream, crushed cookies, or chocolate chips as desired. Slice and enjoy.
