Bread Ingredients
- 3 ripe bananas mashed
- 2 cups rolled oats
- 2 eggs room temperature
- 1/3 cup plain Greek yogurt
- 1/3 cup honey or maple syrup
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/3 cup chocolate chips or chopped nuts optional
Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
In a large bowl, mash the ripe bananas until smooth. Whisk in eggs, yogurt, and honey (or maple syrup).
Add baking soda, baking powder, vanilla, cinnamon, and salt. Mix until fully combined.
Fold in the oats and chocolate chips or nuts if using. Let the batter sit for 5 minutes.
Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
