  • 3 ripe bananas mashed
  • 2 cups rolled oats
  • 2 eggs room temperature
  • 1/3 cup plain Greek yogurt
  • 1/3 cup honey or maple syrup
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup chocolate chips or chopped nuts optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
  • In a large bowl, mash the ripe bananas until smooth. Whisk in eggs, yogurt, and honey (or maple syrup).
  • Add baking soda, baking powder, vanilla, cinnamon, and salt. Mix until fully combined.
  • Fold in the oats and chocolate chips or nuts if using. Let the batter sit for 5 minutes.
  • Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
  • Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
