Wooden spoon
- 1 pound ground beef 80/20 blend recommended
- 1 can (10.5 oz) cream of mushroom soup
- 1 bag (30 oz) frozen shredded hash browns thawed and drained
- 2 cups shredded cheddar cheese divided
Preheat oven to 350°F and grease a 9x13 inch baking dish with cooking spray or butter.
Brown the ground beef in a large skillet over medium-high heat, breaking into crumbles until fully cooked, about 6-8 minutes. Drain excess grease and transfer to a large mixing bowl.
Add cream of mushroom soup to the beef without thinning, then fold in the thawed and drained hash browns until evenly coated.
Stir in 1.5 cups shredded cheese, reserving 0.5 cup for the top. Mix until cheese is distributed throughout the mixture.
Transfer to prepared baking dish and spread into an even layer. Sprinkle remaining 0.5 cup cheese over the top, covering completely.
Bake uncovered for 35-40 minutes until edges are bubbly and top is golden brown. Let rest 5-10 minutes before serving.
- Thaw hash browns completely and squeeze out excess moisture for best texture
- Season beef with salt, pepper, and garlic powder while browning for enhanced flavor
- Let casserole rest before serving to allow mixture to set for cleaner portions
- Can be assembled ahead and refrigerated overnight, add 10 minutes to bake time if cooking from cold
