  • 3 tbsp unsalted butter
  • 1 cup creamy peanut butter not natural or oily
  • 10 oz mini marshmallows about 5 cups
  • 6 cups Rice Krispies cereal or any crispy rice cereal

Optional Topping

  • 1/2 cup semi-sweet chocolate chips melted, for drizzle

Instructions
 

  • Line a 9x13-inch baking pan with parchment paper and lightly grease it. Set aside.
  • In a large saucepan, melt the butter over low heat. Stir in the peanut butter until smooth and fully combined.
  • Add the mini marshmallows and stir continuously until melted and smooth. Remove from heat immediately.
  • Quickly fold in the Rice Krispies cereal, stirring gently until evenly coated with the marshmallow mixture.
  • Press the mixture evenly into the prepared pan using a spatula or wax paper. Avoid pressing too hard to keep them soft and chewy.
  • If desired, drizzle melted chocolate over the top. Let cool for about 30 minutes before cutting into squares.

Notes

For a richer flavor, try using a mix of creamy and crunchy peanut butter. To make them dairy-free, replace butter with coconut oil or a dairy-free alternative.
