Main Ingredients
- 3 tbsp unsalted butter
- 1 cup creamy peanut butter not natural or oily
- 10 oz mini marshmallows about 5 cups
- 6 cups Rice Krispies cereal or any crispy rice cereal
Optional Topping
- 1/2 cup semi-sweet chocolate chips melted, for drizzle
Line a 9x13-inch baking pan with parchment paper and lightly grease it. Set aside.
In a large saucepan, melt the butter over low heat. Stir in the peanut butter until smooth and fully combined.
Add the mini marshmallows and stir continuously until melted and smooth. Remove from heat immediately.
Quickly fold in the Rice Krispies cereal, stirring gently until evenly coated with the marshmallow mixture.
Press the mixture evenly into the prepared pan using a spatula or wax paper. Avoid pressing too hard to keep them soft and chewy.
If desired, drizzle melted chocolate over the top. Let cool for about 30 minutes before cutting into squares.
For a richer flavor, try using a mix of creamy and crunchy peanut butter. To make them dairy-free, replace butter with coconut oil or a dairy-free alternative.
